Superfood Sweet Potato Soup

Ingredients
1 tbsp olive oil
1/2 onion, diced
2 cloves garlic, chopped
2 medium American sweet potatoes, peeled and chopped
1-1/2 cups coconut milk
1 cup water
2 cinnamon sticks
Generous pinch of salt
1/2 lemon, juiced
Garnish with
black pepper
chili oil
fresh basil
Instructions
Step 1
In a medium-sized pot, over medium heat add olive oil, onions and garlic and cook until onions are translucent.
Step 2
Add the sweet potato, coconut milk, water cinnamon sticks and salt and simmer overmedium heat until sweet potatoes are soft (about 10 minutes).
Step 3
Use an immersion blender or transfer to a *hot liquid safe* blender, remove the small middle cap and cover the hole lightly with a cloth to let steam escape. Blend until smooth. Add a splash of water as needed to thin.
Step 4
Add lemon juice and serve. I love drizzling on chilli oil, pepper and fresh basil! Enjoy.
