Sweet Potato Breakfast Toast

Ingredients
1 mid-sized sweet potato
1 tsp (5 mL) olive oil
1 tbsp (15g) peanut or seed butter
1 banana
¼ cup (75g) blueberries
Handful chopped walnuts or pecans
1 tsp (15mL) maple syrup
Instructions
Step 1
Preheat oven to 425°F (220°C).
Step 2
Thinly slice sweet potato (2-3 slices) lengthwise.
Step 3
Brush sweet potato slices with olive oil.
Step 4
Bake in oven for 20 minutes, flipping halfway through cooking.
Step 5
If you want it crispy, broil for a few minutes at the end.
Step 6
Spread peanut/seed butter on the slices.
Step 7
Top with bananas, blueberries and nuts.
Step 8
Drizzle with maple syrup .
Step 9
Serve warm.
