For the crème brûlée, I’ll roast the potato in foil a little longer until it’s completely soft, then pass it through a fine strainer until it’s silky smooth. Then I will make my usual crème brûlée recipe, but at the last second before baking, I’ll fold in the luscious sweet potato purée and a pinch of cinnamon for a seasonal twist.
The crème brûlée is a great option because they can be made up to three days in advance and kept in your refrigerator until needed. You can even involve your guests in the fun of torching the sugar topping on their crème brûlée before serving (bonus entertainer points!).
