The Perfect Sweet Potato
Sweet potatoes are very versatile and there are many ways to incorporate them into your breakfast, lunch and dinner menus.
Choosing & Storing Sweet Potatoes
- Choose firm sweet potatoes with skin that is somewhat even in colour.
- Avoid sweet potatoes with signs of decay.
- Store in a cool, dry, well-ventilated area and use within a week or two of purchase.
- Do not refrigerate unless already cooked. Cold temperatures will cause a hard core and offtaste when cooked.
Cooking Sweet Potatos
Sweet potatoes can be cooked in many different ways. Choose your favourite or try them all!
Baked
Prick the skin and bake at 400°F (200°C) until done for approximately 40-50 minutes.
Fried
Peel and cut sweet potatoes into sticks. Heat vegetable oil in a deep fryer or large deep pot, until the oil is very hot. Cook sweet potatoes in small batches turning carefully for about 8 minutes. Using a slotted spoon, remove sweet potatoes and drain on paper towels.
Boiled
Peel sweet potatoes and cut into quarters. Place in cold water with a dash of salt and bring to a boil. Continue to boil on medium-high heat for 15 to 20 minutes until a fork can easily be inserted into one of the potato pieces.
Microwaved
Prick the skin and microwave on high power for four to six minutes for one medium sweet potato.
