Fresh Sweet Potato Rice Paper Rolls with Peanut Satay Sauce

A familiar bite with the addition of lightly blanched and seasoned American sweet potatoes to give a delicious new sweetness to a refreshing snack.

I’ve partnered with @lifeofasweetpotato to help show how versatile American sweet potatoes can be – who doesn’t love an ingredient that can so easily be used in both sweet and savoury applications? Due to a shorter growing season, there is a limited supply of sweet potatoes grown in Canada; American sweet potatoes are more readily available and we can find them year round in our local grocery stores.
