You can cut each sweet potato in half lengthwise first, which allows for more stability when slicing.

Additionally, it may be helpful to use chopsticks on either side of the sweet potato while slicing to prevent you from cutting all the way through the potato. The chopstick will stop your knife from going all the way through.
