Ingredients
2 Tbsp. (30 mL) olive oil + more as needed
1 Tsp. (5 mL) sea salt + more to taste
½ Tsp. (2.5 mL) paprika
3 small American sweet potatoes, peeled and cut in ½-in (2.5 cm) rounds
1 small package (5 oz/140 g) goat cheese
1/3 cup (75 mL) pecans or walnuts (candied optional)
1/3 cup (75 mL) dried cranberries
2 Tbsp. (30 mL) balsamic glaze
3 Tbsp. (45 mL) honey
15 small basil leaves, for garnish
Instructions
Step 1
Preheat oven to 450°F (225°C)
Step 2
In a small bowl combine olive oil, sea salt and paprika.
Step 3
Take each sweet potato round and coat it in the olive oil mixture all over. Place them on a large baking tray without touching each other.
Step 4
Bake the rounds for 8 to 10 minutes on each side until golden.
Step 5
Transfer to a serving tray and top with the goat cheese, nuts, and cranberries.
Step 6
Just before serving finish with a light drizzle of honey, balsamic glaze and garnish with fresh basil leaves.
